Fiesta Dip and Family Celebracións

Red CknPractically any time there is a family gathering and my youngest sister is involved in the planning, she tends to serve chicken that is red.  Let me explain.  Red Chicken was affectionately named Red Chicken by me, because, well, it is red.  She would take a tour to the local Hispanic market and pick up 6 pounds or so of this delightfully marinated chicken, that probably contains a fair amount of paprika to give it the red coloring.  Since every time we get together, even if it is at the lake, a birthday, or cookout in the backyard, it is always a celebration, and Red Chicken is invited.  My youngest sister and I gather quite frequently, so we took to alternating who would mosey to the market.  After about a year of the same menu, I decided we needed to add a little zest to the party.  Thus enter in from stage left: Fiesta Dip.

Dressing IngredientsThis dip is not only the life of the party, but it is also a celebration of color and taste in your mouth.  It gives so much depth to the tortilla and Red Chicken, that it makes the whole plate exclaim, “¡Arriba!”

Corn upcloseEnjoy it as a side with tortilla chips, spoon it into the tortilla along with the Red Chicken, or make extra to layer on a salad the following day- all of which I have done…at least once a month.

beans, corn, and feta crumbleI will even make a double batch to take on road trips, even though it does get a little tricky trying to dig in and not have the beans and corn roll off the chip and into my lap as I am driving.  For you, though, so long as you don’t mind wearing lunch while driving, it is a welcome colorful meal or snack.
