The day after Halloween, you can find me with a coffee cup in hand. I come from a large family. I am the 5th of 7 kids. Years ago, the sisters in my family started taking turns to host different family holidays. Because of my neighborhood, Halloween seemed like a perfect place to start the trick or treat route. I was so honored to be able to host a time that our families could be together. The laughter in the parents’ eyes and the smiles on the kids’ lips made all the cleaning house, decorating, and cooking worth the effort. The Easy Pumpkin Pound Cake I made for the party was a huge hit.
I had 30 kids and parents that donned fantastic Halloween costumes (yes, even the parents dress up at our Halloween– including me). The little girl princesses that came majestically glided, and the ninjas stealthily crept through my backyard.
The desserts were gobbled up quick, including this Easy Pumpkin Pound Cake. I can honestly say that everyone in attendance at my Halloween party last night has a sugar hangover today.
This recipe works great for the autumn season, and it has pumpkin as one of the ingredients. You can never go wrong with pumpkin.
I made this recipe with a gluten-free cake mix, and it holds together nicely and is super moist. I am going to include this recipe on the menu for Thanksgiving dinner!
Easy Pumpkin Pound Cake
Ingredients
- 1 box yellow cake mix I used a gluten free box, and it turned out great.
- 1/2 c oil
- 4 eggs
- 1 15 oz can of pumpkin
- 1/4 c water
- 3/4 c sugar
- 1 tbsp cinnamon
- 1/4 tsp allspice or nutmeg
Instructions
- Add all ingredients to electric mixer and beat for 3 minutes. Yep, dump everything into mixing bowl all at one time and mix. EASY! Pour into a generously greased bundt cake pan and bake for 40 minutes at 350 degrees.
