Fiesta Dip

This side dish is perfect blend of corn, beans, and color.  With the right amount of kick to suit your taste buds, it is sure to delight.

Ingredients

  • 1 15 oz can black beans
  • 1 15 oz can corn
  • 1 4 oz pkg crumbled feta cheese
  • 1 small onion
  • 1 whole bell pepper (Any color. I prefer orange or red for color.)
  • 1/2 jalepeno
  • 1/8 cup cilantro
  • 1/4 cup apple cider vinegar
  • 1/4 cup white sugar (I use 1/8 cup sugar and 1/8 cup of stevia)
  • 1/4 cup olive oil
  • salt and pepper taste

Instructions

  • Whisk vinegar, sugar, and olive oil together in a bowl or salad dressing shaker. I use this one.
  • Mix black beans, corn, feta cheese, bell pepper, onions, and jalepeno together in a separate bowl.
  • Drizzle dressing over black bean mixture; toss to coat.
  • Refrigerate dip 1 hour before serving.
  • This recipe works great with your favorite vegetebles like green onions, spicy peppers, chopped kale, and basil. Mix what you have in the fridge, and have yourself a fiesta!
