Zesty Zoodle & Marinara

Ingredients

  • 3 zucchini 1.5 zucchini for each person
  • 5 mini sweet peppers or 1 bell pepper or other spicy pepper
  • .5 package horseshoe sausage
  • 1 jar marinara sauce
  • 1/4 tsp red pepper flakes or more if desired

Instructions

  • Run the zucchini through the spiralizer like this one. Spirals will be long, it is easier to cook if they threads are trimmed. One zucchini will feel like too much for one person, but it will cook down.
  • Chop the vegetables.
  • Slice the sausage.
  • Sauté the sausage until golden brown.
  • Add vegetables to the skillet with sausage, cook until tender.
  • Add marinara to vegetables and sausage.
  • In a separate pan, sautee the zucchini for 3-5 minutes. Leave slightly crisp. Drain. (When zucchini cooks, it releases moisture and it will tend to make marinara sauce runny on plate.)
  • Layer zucchini with marinara sauce.
