After School Fuel Peanut Butter Bars

This is a great homemade snack to feed the kids after school.

Ingredients

  • 1 c oats
  • 1 c oat flour
  • 2.5 c rice cereal
  • 1/2 c raisins
  • 1/2 c chopped nuts
  • 1/4 c brown sugar
  • 1/2 c dates (About 5 dates)
  • 1/2 c honey
  • 1 c peanut butter
  • 1/2 c chocolate chips

Instructions

  • Line an 8 inch square pan with wax paper that has been crisscrossed in the dish with 3-4” hanging out.
  • In the bowl of your mixer with flat paddle attachment, add the oats, rice cereal, and raisins.
  • In food processor, make the oat flour by processing 1-2 minutes, then add to the bowl of the dry ingredients.
  • In food processor, grind up your nuts to desired chopped nut size, then add to the bowl of the dry ingredients.
  • Prep the dates by removing the pit. This is easily done by simply tearing them apart with your fingers.
  • In food processor, grinding dates into clumpy paste, about 2 minutes or more if needed.
  • Place all wet ingredients into a large microwave safe bowl.
  • Heat the wet ingredients in microwave for approximately 1 minute, then stir.
  • Return wet ingredients to microwave and heat again for 30 seconds.
  • Pour wet ingredients to bowl of mixer that contains the dry ingredients and blend until well combined.
  • Allow mixture to cool.
  • Fold in the chocolate chips.
  • Pour entire mixture into the square pan and compress mixture to form to pan. (Use hands, spatula, or in this case, another pan to flatten it out). Tip: press hard, REALLY hard. I have even been known to stand on mixture to flatten it out hard enough. This is a key step to make sure bars don’t fall apart once cut.
  • Place in fridge till firm (approximately 1 hour or more).
  • Cut bars to desired width.

Notes

Store in fridge or freezer.
Feed these to your children when they whine they are hungry.
